I purchased this knife after struggling to remove silver skin from a huge brisket. Misen happened to just release the new 7.5 inch fillet and 6 inch boning knife. What I would say is the boning knife is super sharp and flexible with a very narrow tip, which allows you to remove silver skin easily without sacrificing meat, even on a thin pork tenderloin. I've used my knife at least 15 times and last night was the first time I didn't have to reach for the bandages! I would give this 5 stars easily if it was a bit shorter.

I needed this primarily for skinning fish filets because mine was old and not flexible enough. This slides nicely for a clean separation of meat and skin. When the weather warms up I'll be using for removing the skin from pork belly for smoking.
