I have many different brand kitchen knives. I have some from Japan as well. I find these knives (Short Chef and Santuko) to be the sharpest knives right out of the box I have ever used! I highly recommend them! Great deal for the price!

All Misen knives are amazing considering the price. I have the full set but the regular 8" chef knife was a bit longer than my small hands needed. I was excited to see them come out with a short chef knife. I do prefer the blade length and profile of this shorter knife, but the primary drawback is that the balance is not the same as with the 8" chef or the santoku. The short chef knife is more handle-heavy, and where their other knives have their fulcrum right at the start of the sloped bolster (great for a pinchgrip) this one's fulcrum is about a half inch further down the handle. I wish they had taken a bit of weight off the handle to keep the same balance. All this to say, others may prefer a slightly more handle-heavy knife. With the balance difference and more sloped blade this one is actually better for rocking and feels more like a German style knife. Take that as you may.

Very glad to add this to my collection. It's almost the same size as the 8in. Chef's knife, but it allows more maneuverability in hand. Only drawback I wish the handle was a little bit shorter.

As a senior with arthritis in my hands I can no longer wield the full size 8” chef’s knife. I still cook a lot and wanted something more manageable and this 6.5 is just right. It’s harder to find quality 6” chef’s knives and this one is perfect from Misen at a GREAT price point. I am very pleased with the performance of this knife.

I already owned 3 of these before ordering this one. I also ordered one for two of my friends a couple years back. It is a simple conclusion; I like this particular knife. People I have shared this with like this knife. I have a kind of large meaty hand, and this works so much better for me in many was verses a paring knife.

Perfect size when the 8” chef’s knife is too big. All the same features, just as sharp, perfectly balanced. My wife prefers it, and uses it daily! This and the 8” chef’s knife do 95% of our cooking prep. Please make a bundle of these 2 and the paring knife! I’d buy the first 3 sets for Christmas presents!

I love the 6.5" Chef Knife, as it is very easy to handle and cut items. I had bought the 8" Chef Knife and like that also, but this is easier for me to utilize. I am very happy with all 3 of my knives that I have gotten through Misen. Thank you!
