Came good and sharp just like the previous chef and paring knives. Just the right amount of flex to be able to remove the fat and blue skin. Slices beef very nicely too! First smoked beef of the season.

This knife replaced a boning knife I have been using for years. Misen boning knife is thicker and rigid which makes it easier to debone turkey and chicken. I debone chicken weekly and the job is much easier since it does not flex when making bone splitting cuts. Liked it so much I bought 4 more for my sons and sons-in-laws.

I bought this knife to replace a Wusthof Boning Knife that I have had forever but wasn't really holding a sharp edge for me any more. It may be that I just need to get used to a new knife that is replacing such a well loved one but I find this new Misen knife just a little too heavy, a little too long , and not quite "pointy" enough. I use this style knife for so much more that boning. It is my go to for trimming meats, chicken and pork..removing the tendons and "silver skin", a fine point helps get into small spaces. Time will tell...I haven't made up my mind yet. Meanwhile I am giving my Wusthof a little vacation.

This Misen 6 inch boing knife is a real asset to my kitchen and outdoor grill experience. The sharp cutting edge, and thin flexible blade makes meat cutting and boning much easier and cleaner cuts. I am glad I added it to my other Misen blades.
