Sloppy Joes are always a favorite meal when cooking for Cowboys on ranches!  Printable Recipe available on website (link in bio) Ingredients 2 lbs. 80/20 ground chuck 2 jalapenos seeded and diced 1 yellow onion finely chopped 1 tablespoon Kent’s Original seasoning or salt and pepper ½ cup Kent’s Sweet and Spicy Mustard or yellow mustard ½ cup Red River Ranch Mud BBQ Sauce or your favorite bbq sauce 1 cup packed light brown sugar 2 cups shredded pepper jack cheese 6 to 8 Hamburger Buns Instructions Brown the meat in a large cast iron skillet over medium-high heat. When the meat begins to brown, stir in the jalapenos, onion and seasoning. Continue cooking until the meat has fully browned and the onions soften. Drain any excess grease if needed. Stir in the mustard, BBQ sauce and brown sugar. Turn the heat to low and simmer for about 5 minutes. Stir in the pepper jack cheese and cook just until the cheese melts. Top on hamburger buns, sprinkle with additional cheese if desired and serve warm. Lightly butter a 9x13-inch casserole dish or 12-inch Dutch oven. In a medium bowl, combine the sauce ingredients. Cover and set aside. In a large cast iron skillet, add half of the meat and season with the Original Seasoning. Cook for about 5 minutes, or until browned. Beefy Onion Rings - wrap seasoned ground beef around your onion, then batter & fry. Full recipe below. Try with our sweet & spicy hatch chile mustard! Beef Wrapped Onion Rings 1 pound of 80/20 ground chuck 1 yellow onion, sliced into rings 1 cup milk, or buttermilk 1 large egg 1 cup all purpose flour ¾ tablespoon Kent Rollins Original seasoning, or salt and pepper 1 ½ cups Panko bread crumbs Oil for frying Directions In a small bowl whisk together the egg and milk. In a separate bowl, combine the flour and seasoning. In a third bowl, add the bread crumbs. Form a thin layer of the hamburger meat around an onion ring and crimp tightly until it is layered all the way around. Repeat the process until all the hamburger is used. Note: serving sizes will greatly vary depending on the size of the onion rings. Mix the four and the seasoning together and set aside. Preheat the oil to 350 degrees F. Dip the onion rings in the milk and egg mixture and then dredge in the flour  mixture. Dip back in the milk and egg and finish in the panko. Let rest on a wire rack and cool in the fridge for about 10 minutes. Fry in a Dutch oven over medium high heat for about 3 to 4 minutes a side or until they are golden brown. Gimme a Diablo Sandwich & a Dr. Pepper and make it fast! 😂 Diablo Sandwich  Ingredients 1 ½ to 2 lbs. shredded Brisket pork butt or chicken 2 to 3 tablespoons adobo sauce  ¾ to 1 cup Red River Mud BBQ sauce or your favorite blend 4 hot link spicy sausage  6 hamburger Buns  Butter for spreading  Kent’s Sweet and Spicy Green Chili Mustard optional Red onion for topping optional Instructions Preheat the smoker to 350 degrees F. Mix the shredded meat, adobo sauce and BBQ sauce together to your desired taste and consistency. Place the mixture into a foil pan and cover with foil. Place the meat on the indirect side of the smoker, or grill, to warm, stirring occasionally. Place the hot links on the indirect side of the smoker. Add a few chunks of cherry and oak woods to the coals and smoke for about 15 to 20 minutes. Move the hot links over the direct heat for about 4 minutes, or until lightly charred. Remove and cut into round slices. Meanwhile, butter the undersides of the buns and toast. To assemble the sandwiches: Add a generous helping of the brisket to each bottom bun, top with cut hot links. Spread the top bun with Kent’s Sweet and Spicy mustard and top with red onions, if using.
