PS Seasoning’s new Black Tie Steak Seasoning  brings bold notes of black garlic and creamy butter, making it the best seasoning for steak lovers. Wondering how to make the perfect steak? Start with a well-marbled T-bone, season generously, and sear it to a perfect crust. You’ll Need: • 32 oz – T-Bone Steak • 4 TB – Black Tie Steak Seasoning • 1 TB – Olive Oil • 5 Cloves – Garlic, Chopped • 1 Sprig – Rosemary • 1 Sprig – Thyme • 4 TB - Butter Directions: 1. Season your steak generously with Black Tie Steak Seasoning and let it rest at room temperature for 20 minutes. 2. Preheat your skillet over medium heat until it’s very hot.   3. Add 1 TB olive oil to the pan and immediately place the steak in the pan.   4. Sear for 3-4 minutes. 5. Flip the steak and then add the garlic, rosemary, thyme and butter to the pan.   6. Once the butter melts, begin to baste the steak with the melted herb butter from the pan.   7. Baste for 1 minute then cook for one minute.   8. Baste for another minute and then cook for another minute.   9. Remove the steak from the pan and place it on a cutting board to rest for 10 minutes before slicing.   10. Ingredients: 2 Racks – Pork Back Ribs ¼ Cup – Maple Syrup 1 ½ Cup – Apple Pie Rub 1 Stick – Butter 1 Bottle – Maple Bourbon Wing Sauce Directions: 1. Preheat smoker to 250 degrees. 2. Trim the rib as needed and then cut them into individual rib sections. 3. Slather the ribs in maple syrup. 4. Season generously with Apple Pie rub and place on racks. 5. Place in the smoker and smoke for about 3 hours until a little bark forms. 6. Place the ribs in a foil pan add butter and Maple Bourbon BBQ sauce. Stir. 7. Cover with foil and place back in the smoker for 1-2 hours until tender. 8. Remove the ribs from the pan and stir the sauce. We’re back!  When the cold weather hits, the warm, comfort food takes over! Add this smoked chicken and dumpling soup to your weekly dinner plans. You’ll need: 1 – Chicken, whole fryer  (2 ½ - 4 ½ pounds). ½ C – Cock-A-Doodle Brew Beer Can Chicken Rub  2 T – Olive Oil  1 – Onion  4 – Carrots  4 Stalks – Celery  6 Cloves – Garlic  6 T – Butter  6 T – Flour  ¾ C – Dry White Wine  5 C – Chicken Broth or Stock  1 C – Heavy Cream  Dumplings: 2 C – Flour  2 t – Cock-A-Doodle Brew Beer Can Chicken Rub  2 t – Baking Powder  1 ¼ C – Heavy Cream  Directions: 1. Preheat smoker or oven to 350 degrees. 2. Season the chicken generously with Cock-A-Doodle Brew Beer Can Chicken Rub. Place the chicken on the smoker or oven and cook for 75-90 minutes until the chicken is fully cooked. 3. Cool to room temperature. 4. Dice the vegetables and sauté them in a Dutch oven, over medium high heat with oil for 3-4 minutes until the onions become slightly translucent. 5. Add butter and melt before adding in the flour. Stir well and cook for 3 minutes, stirring constantly. 6. Add white wine and cook until the mixture is thick. 7. Add chicken stock and cream, bring to a simmer. 8. Remove the meat from the chicken and shred. Add to the soup. 9. Simmer for 15 minutes. 10. Make the dumpling dough by combining the ingredients listed and mixing until the dough forms. 11. Flatten the dough to 1 ½” thick and then cut it into 1 ½” squares. 12. Form the dumplings into balls and then drop them into the soup. 13. Craving shrimp tacos? Whip up these Baja Shrimp Tacos and have your tastebuds dancing along!  You’ll need: 1 lb - 71/90 Shrimp, peeled and deveined, tail off 1 Cup - Flour  3 TB - El Capitan Baja Citrus Rub 3 - Eggs, beaten 2 Cups - Panko Breadcrumbs  12 - Flour tortillas Limes for garnish Citrus Slaw 2 Cup - Red Cabbage, shredded 1/2 Cup - Red Onoon, julienned 2 TB - Cilantro, chopped 1/2 - Lime, juiced Avocado Cream 1/2 - Avocado 1/2 Cup - Sour Cream Directions: 1. Set up a breading station: A. Flour and El Capitan mixture. B. Beaten Eggs C. Panko Breadcrumbs  2. Dredge the shrimp in the flour, and then place them in the egg. Once well covered with the egg wash, place the shrimp in the breading.  3. Repeat with the remaining shrimp.  4. Preheat fryer to 350°.  5. Fry the shrimp until they are fully cooked and golden brown.  6. Place the cooked shrimp on a paper towel lined tray and season with more El Capitan. 7. Make the citrus slaw by combining the listed ingredients. 8. Make the avocado cream by pureeing the listed ingredients together.  9. Heat the flour tortillas and then build the tacos.  10. A bed of slaw followed by 5-6 shrimp.  11. Drizzle the tacos with some avocado cream and finish the tacos with a garnish of chopped cilantro, cheese (optional) and some lime wedges.  12.
