Part 4 of Soup Season with STAUB- where we share our favorite French-inspired soup recipes. Today we're making a French Lentil Soup. Save this post to keep the recipe below: Ingredients Soup 4 oz pancetta, diced 1 Tbsp olive oil 1 1/2 cups French lentils (du Puy) 2 large shallots, finely diced 6 garlic cloves, minced 1 carrot, finely diced 1 leek, quartered + chopped 6 cups chicken bone broth 1/2 cup dry red wine 5 thyme sprigs 1 bay leaf 1 Tbsp Herbs de Provence 1/2 Tbsp harissa paste 1 tsp Espelette 1 tsp cumin 1/2 tsp sherry vinegar 2 Tbsp chives, for garnish 1 lemon, zested + juiced Rustic Sourdough Croutons 1/2 loaf crusty sourdough (about 14 oz), torn 1/4 cup olive oil 2 tsp Espelette pepper 2 tsp Herbs de Provence Kosher salt, to taste Instructions Make croutons: Toss torn sourdough with olive oil, Espelette, Herbs de Provence, and salt. Spread on a parchment-lined sheet and bake at 400°F for 15–20 min, stirring halfway, until golden; cool. In a 4qt Dutch oven over medium heat, add pancetta to a cold pot and cook until crisp; remove and reserve fat. Add olive oil, then carrots, leeks, and shallots; sauté 3–5 min. Add garlic, Espelette, cumin, Herbs de Provence, and harissa; cook 3 min until fragrant. Deglaze with red wine; reduce by half. Rinse lentils. Add lentils, thyme, bay leaf, and broth. Bring to a gentle boil, then simmer 35–45 min until tender. Season to taste; remove thyme + bay leaf. Blend briefly with an immersion blender for slight creaminess. Finish with sherry vinegar and lemon juice. Serve topped with croutons, pancetta, lemon zest, and chives.

Welcome to part 1 of Soup Season with STAUB, where we're sharing our favorite French-inspired soup recipes. Today we're making a Butternut Squash Velouté; a rich butternut squash soup we know you'll make again and again. Save this post to keep the recipe below: Butternut Squash Velouté Ingredients: 
 SOUP 3 lb. butternut squash, peeled and chopped into small chunks (approx. 1” pieces)
 4 tablespoons olive oil, divided
 2 shallots, thickly sliced
 6 large cloves garlic, unpeeled
 Salt
 Freshly cracked black pepper
 1” piece ginger, peeled and grated
 1/2 teaspoon red chili flakes
 1 tablespoon Harissa
 5 cups vegetable broth
 ¼ cup heavy cream
 Juice from ½ a lemon
 Fresh dill, for garnish 
 LEMONY CRÈME FRAÎCHE
 ½ cup Crème fraîche
 Zest from ½ a lemon
 Juice from ½ a lemon
 Salt 
 Serving/Styling:
 Crusty French Bread
 Dill
 Heavy cream
 Peppercorns + Flaky salt
 Lemon 
 Instructions:
 1. Preheat the oven to 400ºF and line a large baking sheet with parchment paper.
 2. Add the squash, shallots, and garlic cloves to the baking sheet. Drizzle with 2 tablespoons olive oil, sprinkle with salt and pepper, then toss together until well coated. Roast for 30-40 minutes, until squash is caramelized and tender, tossing halfway through. When cool enough to handle, peel roasted garlic gloves.
 3. In a 4 qt Dutch oven over medium heat, add remaining 2 tablespoons olive oil, ginger, chili flakes, and harissa. Stir together and cook until fragrant, about 2 minutes.
 4. Add the roasted squash, shallots, peeled garlic, and vegetable broth and stir to combine.
 5. Cover and simmer for 15 minutes, stirring occasionally, until the broth is flavorful.
 6. After the soup has finished simmering, turn off the heat and blend with an immersion blender until completely smooth.
 7. Stir in the heavy cream. Add the lemon juice, and adjust seasoning with salt and freshly cracked black pepper.
 8. Make the Lemony Crème Fraîche: stir together Crème fraîche, the zest and juice from half of a lemon in a small bowl. Season to taste with salt.
 
9. To serve, ladle soup into bowls and top with a swirl of lemony Crème fraîche, fresh dill, and freshly cracked black pepper.#madeinstaub #grandopeningbfcm #soupseason

I call these my “How High Is Too High” no-bake Christmas  cookies 😂 (PS they taste like a salted Reesie’s) No cocoa, no brown sugar. Just: white sugar, vegan butter, water, organic Smucker’s peanut butter, vanilla, crushed cashews, and crushed salted potato chips. Boil sugar + water + butter for 1 minute, stir in PB and vanilla, pour over the crushed cashews and chips, mix, scoop onto parchment, let set. Sweet, salty, crunchy chaos. Prep the mix-ins 	•	Crush cashews and potato chips. 	•	Add to a big mixing bowl. 	2.	Make the syrup 	•	In a saucepan: sugar, water, vegan butter. 	•	Bring to a full boil over medium heat, stir. 	•	Once boiling, cook 1 minute, still stirring. 	3.	Flavor it 	•	Turn off heat. 	•	Stir in peanut butter + vanilla until smooth. 	4.	Mix it all 	•	Pour hot mixture over the crushed cashews and chips. 	•	Stir fast until everything’s coated. 	5.	Form cookies 	•	Drop spoonfuls onto parchment. 	•	Let sit 20–30 minutes until set. ⚠️ Contains peanuts + tree nuts.
