Loovve me some #sourdough #cakepops #cakepop #desserts #sourdoughforbeginners #layitflat  p.s. the cake recipes in the book, not the pops. also icing is my homeade icing recipe on my page.  🍰 Cake Ingredients * All-purpose flour: **300 g** I use bread (approx. 2 ½ cups) * Fine sea salt: **5 g** (1 teaspoon) * Baking powder: **4 g** (1 teaspoon) * Baking soda: **4 g** (1 teaspoon) * Granulated sugar: **350 g** (about 1¾ cups) * Cooking oil: **150 g** (⅔ cup) * Large eggs: **3** * Fresh strawberry purée: **450 g** (about 2 cups / 1 lb) * Sourdough discard: **62 g** (¼ cup) How To Use 1. **Preheat your oven** (typically to 350 °F/175 °C unless stated otherwise). 2. **Combine dry ingredients**, then separately **whisk wet ingredients** before mixing together. add dry to wet.  3. **Fold in strawberry purée** and **sourdough discard** gently. 4. Bake until a tester comes out clean. 5. **Mix frosting** by creaming butter and cream cheese, then slowly adding powdered sugar, strawberry purée, and a pinch of salt until smooth and spreadable.  **If making cake pops** Crumble the WARM cake into the bowl and crumble, add frosting. Make sure there are no large lumps. Turn the mixer on low speed and beat the frosting and cake crumbles together until combined. Scoop 1 Tablespoon (about 20g) of cake/frosting mixture and roll into a ball. Place balls on a lined baking sheet. Refrigerate for 2 hours, or freeze for 1 hour to set the shape. Re-roll the chilled cake pop balls to smooth out, if needed. Place the tray back into the fridge, as you’ll only work with a couple at a time. Melt the chocolate or candy melts in a liquid measuring cup (best for dunking!) in the microwave in 20-second increments, stirring after each increment, until melted and smooth. You can also use a double boiler on the stove, if you prefer. Coat the cake balls. Dip the end of a lollipop stick about 1/2 inch into the coating, then insert the coated end into the center of the cake ball. Only push it about halfway through the cake ball. Dip the cake ball into the coating until it is completely covered. Make sure the coating covers the base of the cake ball where it meets the lollipop stick. Very gently tap the stick against the edge of the measuring cup to allow excess coating to drip off. Decorate the top with sprinkles and place upright into a styrofoam block or box. Repeat with remaining cake balls. The cake balls must be very cold when dipping! Coating will set within an hour. Store cake pops in the refrigerator for up to 1 week. enjoy 😉

And I'm in my feels right now 😩 #baking  is my therapy! #sourdoughstarter #sourdoughtok #layitflat  #sourdoughforbeginners  200g starter (I use stiff sweet starter) 180g warm whole milk 100g butter melted 60 grams granulated sugar 2 large eggs 8g grams salt 500 grams bread flour CINNAMON ROLL FILLING Brown Sugar  *this is an estimate I don't measure, I go for color and consistency, then taste.  113g butter very soft or melted *1 stick* 100g packed brown sugar  2tbsp ground cinnamon Banana Cream  8tbsp unsalted butter, room temperature 2/3 cup light brown sugsugar  2-4 mashed bananas 2 cups mini nilla wafers, crushed 1 tablespoon vanilla bean paste Baked Apple Filling Cut 3-6 apples depending on if you're doing a single or double batch.  Add brown sugar, cinnamon, nutmeg and maple. Optional for flavors.  Sauté the Apples until the liquid is thicker add cornstarch to help.  Let cool fully before adding to cinnamon rolls.  ICING You can adjust this to your liking for cream cheese or powdered sugar.  50g butter, softened 4oz cream cheese, softened 120 grams powdered sugar 2tbsp heavy cream *pour into your baking dish as well!!* 1tsp vanilla *i don't measure* 2 grams maple extract *i don't measure* Brown sugar *optional* to taste To make the sweet stiff sourdough starter  40g ACTIVE Starter  40g water  20g sugar  120g flour  I tripled this recipe for cinnamon rolls. When working with a naturally leavened starter you can use this in direct replacement of any sourdough starter recipe. Takes around 10-14hrs to rise depending on the temps in your environment.  To make the dough use a stand mixer *can be done by hand but much more work and difficult when using a stiff starter* Mix all ingredients except salt and butter on low until incorporated. Once mixed cover for 30-60 min to let rest then add the salt and butter. Add melted butter in SLOW small amounts at a time. Mix on m for 4 min. I always hand kneed as well.  Once done cover and let rise on your counter for 4-8hrs *once doubled in size* and you can either bake then or cover and set in the fridge overnight. This helps develop flavors and the fluffy texture of the bread!  When you're ready to bake pre heat oven to 350° f  Roll out dough in however many flavors you have *i had 2* and roll to a thin piece of dough.  Rolled out, add your inclusions.  You can roll your rolls into a log shape and use a knife or yarn to cut the rolls. Or you can use a pizza cutter. Both ways work.  This recipe creates 18 smaller size or 10 jumbo cinnamon rolls.  Bake for 18 min or until golden brown.  For the icing follow ingredients above and mix well.  Icing goes on when they're warm not hot! Enjoy 😉

My pretzels are famous 🤣😘 #pretzels #sourdough #layitflat  #sourdoughtok #sourdoughbread  237g warm water 13g brown sugar 4g active dry yeast 3/4 cup butter 1.5 sticks 200g sourdough discard unfed, at room temperature 500g cups all-purpose flour 2 teaspoons kosher salt BOIL/Counter top  10 cups water ⅔ cup baking soda For Topping 2 egg beaten with 1 Tablespoon water to make an egg wash Flaky sea salt for topping *i use pink himalayan as well* Mix the WARM water (110°f minimum) with brown sugar and yeast. Allow the yeast to active and foam. If it doesn't do this dump it and start over!  Once formed and active, add all ingredients except butter to the bowl of a stand mixer and mix on low speed. Add the melted butter in very slowly! Little at a time. Once incorporated kneed on medium for 3-5 min (i do this by hand!)  Cover and let sit in a bowl with a greased bottom for 60-90min!  Once doubled or more dump on countertop. You shouldn't need much flour you want the resistance so dont use flour unless absolutely necessary!  Start the water boil with your soda now.  You can shape however you want. This recipe gives me 8-12 "normal size" pretzels or 75-90 mini pretzels.  Once shaped and put on baking sheet with parchment paper. Water should be boiling and ready for a bath. If they're large pretzels each side gets 30 sec (1min total). If mini 30 sec total is fine. Place back on parchment.  Once all have been dunked, egg wash with the watered down egg. We just want a lighter coat not a egged pretzel!  To with your salt or be lame and go plain.  Bake at 450° for 7-9 for mini or 11-14 for large.  Enjoy 😉
