Prepare brine: Dissolve the salt completely in the water. (This is about a 2% brine — good for root veggies.) 	2.	Pack the jar: Put the carrots, beets, and optional spices into a clean glass jar. 	3.	Add brine: Pour the brine over the veggies until they are fully covered. 	•	Leave 1 inch (2–3 cm) of space at the top for gases to escape. 	4.	Weigh down the vegetables: Use a fermentation weight or a small piece of cabbage leaf to keep everything under the brine. 	5.	Cover loosely: Close the lid lightly or use a cloth with a rubber band — the gas must escape during fermentation. 	6.	Ferment: Leave at room temperature (65–75°F / 18–24°C) for 5–10 days. 	•	You’ll see bubbles — that’s a good sign of fermentation. 	•	Taste after day 4–5. When it’s tangy and slightly sour, it’s ready. 	7.	Store: Move the jar to the fridge to slow fermentation.
