If your sourdough starter ever seems slow, flat, or just not as active as you’d like, adding a small amount of rye flour during feedings can make a big difference. Rye flour is naturally rich in nutrients, minerals, and enzymes that wild yeast and beneficial bacteria thrive on. Those enzymes help break down starches into simple sugars, which gives the microorganisms in your starter more food to fuel fermentation. That extra activity can help strengthen your starter and encourage better rise and fermentation in your dough. For this feeding I used: 35 g sourdough starter 70 g warm water 60 g all-purpose flour 10 g rye flour You don’t need a large amount. Even a small addition of rye flour can help boost activity and support a healthy fermentation environment. Every starter behaves a little differently depending on temperature, flour, and environment, so the more you work with it, the more you’ll start to recognize what your starter needs.
