This flour makes the fluffiest sourdough and has excellent strength when I do my stretch/coil folds or the Bertinet slap folds. I’m a fan of how soft the flour feels compared to how weighted other flours feel.

I really enjoyed the texture of the grain and it made my bread incredibly delicious. Awesome purchase and I do plan down the road to continue buying from Ballerina Farms. ❤️❤️❤️❤️

I'm not a dry potato type gal but if our food supply diminishes its good to have some dry goods. Good stock up item.

This flour is so soft & fluffy, it mixes beautifully into my sourdough starter, the extra protein gives great strength to breads & it’s flavor is so neutral that anything you add into your loaves, will take on the flavor wonderfully. I like to mix this flour with some Spelt or Rye. Makes great bagels also! I do wish sales would run cuz it’s expensive.
