How to make a sushi cake from scratch that looks impressive but is actually simple to assemble 🎂 This layered sushi “cake” is built with seasoned rice, homemade sushi grade salmon, creamy crab, and fresh toppings for a dish that slices beautifully and tastes even better. Salmon Prep:  This recipe uses wild Alaska salmon that was flash-frozen at −38°F at the source, which is the safest way to prepare salmon for raw dishes. If using farm-raised or fresh salmon, freeze it properly first (about 7 days at −4°F). I used salmon from Sitka Seafood Market which made this super easy.  Ingredients: - Salmon (skin removed) - Salt + sugar (for quick cure) - Soy sauce + sesame oil - Sushi rice - 4 tbsp sushi seasoning (or mix: 4 tbsp rice vinegar + 2 tbsp sugar + 1 tbsp water, stir until dissolved) - Wasabi furikake - Imitation crab + mayo - Crushed seaweed sheets - Diced cucumber - Avocado slices - Caviar (optional) - Black sesame seeds Steps: - Cover salmon with equal parts salt and sugar for 1 hour to lightly cure and draw out moisture. Rinse, dry, cube, and season with soy sauce + sesame oil. - Mix cooked sushi rice with seasoning and furikake. - In a ring mold: layer rice, crab mix, crushed seaweed, cucumber, salmon. - Top with caviar (optional), avocado, and sesame seeds. - Lift mold, slice like cake, serve. #sushi #sushicake #sushibake #sushigradesalmon #sushilover
