I’m still pretty new at this sourdough stuff. I’ve been using a good Dutch oven, but haven’t been getting as soft an interior as I wanted. A friend has a Krustic and I wanted to make oblong loaves, so I managed to get one on sale plus a coupon to make it more financially palatable. My dough was in the fridge when the pan arrived and I baked a few hours later. Not only did I get a beautiful loaf, but the interior was softer AND the crust was thin and crispy, vs hard - a totally unexpected bonus! I’m very happy with my result.
