Classic yeast for all styles meads, ciders, and wines—especially in cold, clear, or low-nutrient musts. Ferments fast and clean at 50–95°F (10–35°C). Tolerates up to 18% ABV and makes up to 6 gallons. Great for traditional meads, ice wines, and aromatic whites. Selected by INRA Montpellier for its extreme resilience and ester production under wild conditions.

‼️  👀 easy mead to make at home (aka Honeywine)👇full recipe 🚨 disclaimer: this is not legal advice check local laws before engaging in in any such activity 👨‍⚖️  avocado blossom honey mead recipe 👨‍🍳   ~3 lbs avocado blossom honey 🥑  ~1 gallon water 💧 (approximately) lalvin K1V-1116 yeast 🥖  3-4 tsp yeast nutrient 💪  14 grams med heavy american oak cubes 🇺🇸  1.108 OG 🏋️  1.000 FG  🌡️  Goes without saying, sanitize everything 🧼    Notes 📝 : Any honey can work, but avocado blossom honey is recommended because it has unique caramel and butterscotch flavors which really shine through with aging. When pitching the yeast, I recommend rehydrating but if you’re dry pitching use at least 2X the recommended amount to minimize chances of a stressful fermentation. Fermentation temperature was 80-85F average even tho my brew room got to around 92-93F one day; still no off flavors — this was largely due to giving a healthy dose of fermaid and DAP for nutrients. It’s also why I like K1V-1116 (especially for beginners), it’s very forgiving, low maintenance, and consistently gives outstanding results with a wide range of temperatures. I definitely pick up on floral and fruity esters maybe akin to white grape or pears from the yeast. As for aging, I’d say this was decent at 2-3 months, great at 8 months, and award winning after 1 year. The oak smoothed out beautifully and the vanilla, coconut, caramel notes are very forward on the nose and palette. Very balanced, no harsh tannins. Full disclosure, I started this in May 2024 and bottled September 2025, so I did age this longer than a year. Overall, this is one of best meads I’ve had in years.
